Syn Free Slow Cooker Spiced Carrot & Lentil Soup

Today I decided to try a new soup recipe for dinner. I found one for something called spiced carrot and lentil soup which is cooked in the slow cooker. Anyone who knows me personally knows I love my slow cooker and swear by it, so it seemed like the perfect choice for me!!

It's really simple to make and turned out really well as you can see from my pics (click to enlarge):


Quite simply you throw all the ingredients in the slow cooker and let it cook for 6 hours on the low setting. The smell of the cumin and garlic in the soup flooded the house, which was nice to inhale, but bad as I wanted to eat the soup so badly. Alas I couldn't as the 6 hours had yet to finish!

Once I finally got hold of a bowl of soup I was pleasantly surprised. Despite the lack of ingredients the soup was incredibly tasty! It had a really strong kick to it, which I didn't mind (put 2 tsp of chilli flakes in instead of a pinch!), but some may find too hot.

The recipe serves 4 people and is completely syn free on the Slimming World diet, so two portions have been put in the fridge for tomorrow's lunch. Eating leftovers has become especially important as money is tight!
